Quick and Delish! Low Carb Keto Salad
A healthy Low Carb Keto Salad is the ultimate Summer snack or light meal to keep you on track with your healthy eating habit goals. If you are a salad nut like me, you will absolutely love this fresh, healthy salad that can be whipped together in no time. This specific Low Carb Keto Salad is inspired by Middle Eastern chopped salads enjoyed throughout the region.

Low Carb Keto Salad Ingredients
Let’s try to buy organic if possible – or better yet: grow your own!
Here are the ingredients that you will need to prepare your Low Carb Keto Salad. I preoared mine for one, but you can increase the recipe to serve more. I used equal amounts of tomato and onion and parsley. I love parsley, but not everyone does as much, so go easy on the parsley at first.
- Tomato
- Onion
- Parsley
- Olive oil
- Fresh lemon or unsweetened lemon juice
- MCT oil (optional but recommended)
How to prepare your Low Carb Keto Salad
Preparing your Low Carb Keto Salad is super fast and easy.
Simply chop the parsley, tomatoes and onions – I like to use a dicer or vegetable chopper like this one for the tomatoes and onions, and a herb scissors will make it super easy to prepare the parsley for your salad. It’s up to you if you want to slice or dice your tomatoes and onions, but I personally prefer the diced or chopped version of this salad.
Add your chopped tomatoes, onion and parsley to a bowl and generously smother with your desired amount of olive oil (I use a lot!). You can add 15 – 30ml of MCT oil at this point if you wish and mix it in. Finally squeeze in some lemon juice to taste.
Serve and enjoy your Low Carb Keto Salad!
This quick and easy Low Carb Keto salad can be packed for work or school lunches and works great as a to-go-salad in a jar. You can layer it and then simply give it a shake when you are ready to enjoy your fresh, healthy keto salad.
